Greek cuisine - one of the most delicious and healthy in the world. Jewish Greek cuisine - for obvious reasons - twice. Pies with various fillings, fish, appetizer - all here in abundance, but in the long list of Greek-Jewish dishes separately allocated burgers.

Jews Romaniot knew the secret, transforming them from ordinary dish into a masterpiece of culinary art. The secret was quite simple and unsophisticated - the preparation of stuffing it added bread, soaked in red wine previously. Of course, the alcohol evaporated during frying, but remained fragrance - which is what often makes the flavor culinary dish into a masterpiece.

It should be adopted and other secrets of the old cook, but wine and bread, mince added tomatoes and fresh herbs - parsley, cilantro (gashnich, coriander), mint garden. But the presence of the bow was considered completely optional. If it is added, that quite a bit - and in this case, the bow should be at the usual white, and definitely red.

Fried meatballs in a pan or grill - preference for the first method. The ideal garnish such cutlets considered flavored salad basil (Rayhon, Reykhan) Tomato.

Ingredients:

2.1 kg veal (cuttings);

3 slices of white bread;

1/3 cup of red wine;

1 tablespoon olive oil;

1 tomato;

3 garlic cloves;

1/2 parsley;

1 small red onion (optional);

Salt and ground black pepper - to taste.

Cooking method:

Put the bread in the wine so that it is completely soaked.

Then pass it through a meat grinder, along with beef, garlic, onion and tomato.

Finely chop the herbs and add it to the meat.

There also pour the olive oil and the rest of the wine.

Salt, pepper minced, blind patties therefrom, and then fry in olive oil.
